There is a mound of white foaming stuff growing in my refrigerator and I refused to throw it away. A few weeks ago I started this sourdough starter, and since then I’ve made some great sourdough bread and pancakes. And besides the taste, I also love the fact that sourdough is lower in GI than most other breads, even whole grain. That’s because the sourdough fermentation process changes how it’s absorbed into the body.
If you’ve been reading my blog and articles, you know this Suzie Homemaker behavior is totally out of character for me. Sure, I’m about healthy, but quick is my middle name. I don’t like spending time in the kitchen when there are so many other fun things to do.
But truthfully, it really doesn’t take very long to make the starter, nor the bread. And the pancakes are just as fast as using a box mix. The thing is, it’s like having a pet…you have to feed it on a regular basis. Every day for that first week, then twice a week. What will I do when I go on vacation for more than a few days? They have dog sitters, but what about Sourdough Sitters?
